Include version in git exports

Right now installing our code from a git export (e.g. zenodo) will fail to find a version. We are using hatch-vcs to handle the version, which in turn uses setuptools-scm. That one, in turn, instructs how to configure git archives: https://setuptools-scm.readthedocs.io/en/latest/usage/#git-archives
