new version of mysql requires an upgrade
I've updated the dependency versions (trying to see if new pikepdf fixed an issue with accessing metadata).
This bumped mysql to 8.0.20, and resulted in all instances failing to start with this in mysql logs:

For now I'll pin mysql to 5.7.20 (hi semver).
