This is a major upgrade, switching to pixi + jupyter-book 2.

Still to do:

• Fix plot style and overflow
• Check if it's possible to fix latex in Holoviews widget labels
• Fix link preview for internal links reported upstream
• Fix landing page navbar
• Add an explanation of what is up
