clarify modes docstrings

Docstring fixes to kwant.system.InfiniteSystem.modes and related functionality that have the intention of clarifying things. The trigger was me noticing that the previous description of kwant.system.InfiniteSystem.modes made it impossible (without looking at the source) to understand what the return value is.
